Aldo and Maria, along with their collaborators, work semolina, eggs and daily gestures to create a product that releases energy, well-being and pleasure to anyone who tastes it. Known as the “AL-DO Method,” their production process reflects authentic traditions of the Marche region. 

Both durum wheat semolina and chicken eggs are absolutely part of the local supply chain. Italian raw materials carefully chosen, tested, selected and balanced by Maria and Luigi to obtain a pasta with an intense yellow color, opaque, Porous on the inside and naturally rough on the outside. The dough is worked with a few steps to ensure maximum yield in cooking. A pasta so renowned that it is the official sponsor of the G20.
