Quality research

Stone-ground flour is visually identifiable by its color and grain size, as it will never be as finely refined as type 0 or 00 flours. Only with stone grinding is it possible to obtain a fully milled product that entirely contains the parts of the grain.

Attention to detail

The ancient water-powered stone grinding, combined with the work of the miller, ensures the production of a high-quality product. The slow movement of the mobile millstone keeps temperatures low during milling, preventing the deterioration of organoleptic properties and preserving essential nutrients.
